Amaretto Espresso Chocolate Mousse is the ultimate indulgence – seductive, a bit naughty, and a texture that melts any attempt of resistance, instantly.

Neptune and Jupiter co-rule Pisces. Jupiter, larger than life, loves to live it up. Indulgence is his middle name. Neptune loves sweet temptations, and anything boozy. So, for me, the perfect Pisces recipe rolls all this into one, et voilà! You get Amaretto Espresso Chocolate Mousse!

Ingredients:

  • 150g good chocolate (70%)
  • pinch of salt
  • 4 large eggs
  • 150 ml double cream
  • 25ml Amaretto
  • 2 tsp instant espresso powder
  • 1 large tablespoon of good quality cocoa powder

Chop up the chocolate into small pieces and place into a heatproof dish. Place dish over a pan with simmering water in it. Melt the chocolate with a pinch of salt, until smooth.

Separate the eggs. Add the sugar to the egg yolks and beat until the sugar has dissolved. Beat the egg whites with a tiny pinch of salt until stiff.

In another bowl whip the cream until it forms soft peaks.

When the chocolate has melted completely remove the bowl from the pan. Add the Amaretto and the espresso powder and the cocoa powder to the egg yolks. Stir until well blended.

Stir in the cream. Then fold in the well-tempered chocolate.

Finally, fold the egg-whites in until the mass is smooth and evenly colored.

Let it set in the fridge for at least 2 hours – if you can manage to wait that long!

Decorate as you please – e.g. With a dollop of whipped cream and pistachios or crumbs of biscotti, a chocolate-dipped mint leaf or whatever you fancy.
