Banilla Pie

Taurus is your archetypal foodie – but he can have quite conservative tastebuds. Taurus likes food to be predictable and substantial. They don’t care much about fad foods and forget about nouvelle cuisine. Good, healthy, clean food, well prepared, and unpretentious is what scores with Taurus. And there’d better be plenty of it. However, their weak spot is their sweet tooth. 

Bannoffee pie is a perfect candidate for a Taurean dessert, but it is SO heavy! I changed it a little bit to make it a bit lighter. Et voilà: ‘Banilla Pie’.

Ingredients:

  • 75g butter or coconut fat, melted
  • 350g Oaty cookies (e.g. Hobnobs), finely crushed
  • 1 packet of vanilla custard
  • 400ml milk
  • 40 g sugar
  • 3 large bananas, sliced
  • 400 ml whipped cream
  • 2 packets of vanilla sugar
  • 100g dark chocolate

Heat the oven to 180°C /356°F. Crush the cookies in the food processor. Add the melted fat and pulse to combine. Evenly spread and press the mixture into a 26 cm cake tin with a removable base. Bake for 10-12 min until lightly toasted and set.

Cook the custard according to the recipe on the packet, but using only 300 ml of milk. Spread the custard over the pie crust and put it in the fridge for about an hour to cool.

Spread the sliced bananas over the custard. Whip the cream with the vanilla sugar and spread over the bananas. Melt or shave the chocolate. Drizzle or sprinkle the chocolate over the cream layer for decoration.
